If used as a preservative it also can be found under the name glocono delta lactone,which also acts like a slow rising agent in baked goods if you cannot use yeasts.Basically you could say that GDL or glutamic acid hydrochloride is one of the fruit acids. Glucono delta lactone is glutenfree. I am digging up the other use for glutamic acid hydrochloride.This should be most likely also 100% glutenfree.I will send the info as soon as possible. Ted Wolff
