When my husband bakes wheat bread for himself he likes to grind the flour
right before baking it.  The kitchen is off limits for me during the
duration or I have to wear a mask - the flour dust flying around the
kitchen does affect me; I have to wait till he cleans it all up again.
If I don't I get symptoms in a few hours; the ones that I especially
notice in those instances are:  mucous in throat & nose, stuffy head,
dirty/gritty eyes.  If you are working in a "gluten dust" environment
like you are, I would think that your body is on the immune response
alert constantly (That is no medical statement, just a layperson's
perception).
