The bricks with the holes are extruded - like a play dough machine that kids have.  It is extuded with the holes as a long tube and then cut into bricks.

 

The ones with the recessed names, called frogs, served as identification, and also for mortar to provide  a key, like the holes do (but the holes also make the bricks lighter and cheaper).
