A real challenge these days is getting good "straw".   Older wheat varieties grew tall, some as much as 5', and produced a lot of straw as a by-product of threshing.   Straw was great for bedding in the barns.   Harvesters cut the stems close to the ground.    Short stubble was ploughed in.   With the advent of modern self-contained mobile reaper-threshing machines, and the accompanying demise of work horses and traditional dairy cow management, the lack of need for straw to bed animal stalls and the desire for short wheats at about 2'-6" tall led to breading plants that can simply have their heads cut by the mobile threshers, leaving stubble that can be ploughed directly back into the soil.   No straw by-product.   Today's short-chopped chaff is simply blown out of the machines and back on to the field.
 
"Hay" is for animal feed and still has its protein-rich heads or leafy material stored together in the bales.   Don't want that.   Too much moisture and material for rot and mould.   Real straw is wonderfully stable.
 
When we grew some old (tall) varieties of wheat and threshed out the crop in traditional fashion, goat breeders here drove 300 miles(one way) to get the straw to use as bedding because it is now so hard to find.

I haven't but recall reading that one of the most important things is to get the stray or hay dry then build to keep it dry - very difficult in the northeast.
