When my sons were diagnosed with Celiac in 2001, we began putting together this cookbook. The purpose of the book is to provide a resource to those with Celiac Disease or gluten intolerance who want to offer great tasting meals to their entire family. My philosophy in choosing the recipes was to think about how to prepare meals with a limited number of "special" ingredients. For example, my recipe for meatloaf doesn’t call for any breadcrumbs. We include a good selection of recipes for desserts, coffee cake and banana bread, but chose to concentrate on meals you can serve at home rather than concentrating on baked goods. No one can go on the gluten-free diet without getting help and support from others.
