Hi There
I am a celiac vegan, from a diet point of view. The only difference being
that I can not digest any complex carbohydrates or nuts either.  I live off
vegetables low in carbohydrates, very little fruit and olive oil. I eat
butternut squash and avocado pear with nearly every meal.  The butternut
squash is really too sweet for me though.  I can manage red and white wine
in small quantities and use soya milk in tea.  Is there anyone else out
there who has a similar diet to mine with some ideas that  will maybe
brighten my diet up. I blow up like a toad if I eat anything too sweet or
high in carbos!
