They don't hunt horses. They ride on horses to hunt foxes. When they want horse meat, the horses are too dumb to run away. I have never seen any historic stables - they are pretty practical up there, and don't traffic much with any horse-building other than what is most efficient. Also, riding to the hounds is sort of a post-historic thing.
