I am brand new to this list and was wondering about modified food starch.  I
have read up on Celiac and most everything about it.  I was recently
diagnosed with it, in April and have been struggling with a tasty, yet
gluten-free diet ever since.

What is the rule here in the United States for modified food starch?  Is it
only made of corn or potato in the U.S.?  I have read various articles and
they've all been different.

Thank you for your time.  I hope to learn more as I go along with this
disease.
