Factor in the digestive tracts properties (acidity for one, is a mighty barrier). Also factor the impact of the immune system and chemicals and you'll find it's a hard to change "instantly" (under 90 days) ecosystem. As for your Vet experiences, I do not denigrate them, but their digestive system is so complex, advanced and different that I dare not compare the human one with it. That's my 2 cents.
