Hi Flatbread Bakers!

To avoid shredded flatbread dough (!) try this:  Use a floursack towel
or other cloth to roll your dough.  Sprinkle the cloth with rice flour,
cover the dough with waxed paper, roll, and away you go.  The dough does
not stick to the towel, is easy to transfer to the waiting, heated pizza
stone.  You feel great.  It works.

ALSO try using rice bran instead of the corn meal that pizza makers use
to prevent the dough sticking to the stone or the pan.  (Especially good
for those of us who can't eat corn and who miss that nice gritty
texture.)
