thanks--I'll look into it.  I think it's too high in carbohydrate

while this cheese is only l carb per 2 oz., and too low in moisture
(only
5%)
while this is 34%, and not enough fat (only 30%, while this is far
higher).
I don't want my carbs to exceed 20 a day because that level maintains
ketosis, or "bliss."
