In a recent post to veg-raw by [log in to unmask], the question is raised:

>Why are yeast-based fermented foods irrelevant to this discussion, since
>yeasts are living, too?

You are correct that yeasts are living. Yeast fermentation produces alcohol,
which is poisonous. As raw fooders, we don't want to consume poison, even if
it is raw and live! So by excluding yeast based fermented foods, I was
excluding beer, wine, liquor, and also kefir-type products (kefir is a
yogurt-like product that includes yeast in the ferment; it can be up to
2% alcohol but is usually much lower).
