I'm not sure.

At 95, it takes about 8 hours or so before it's really dry.  It's great
anytime before, but not dry.  Sometimes I put it in and wind up leaving it
overnight.  It's more easily eaten when I do that as it gets REALLY dry.  The
buffalo takes longer than the ostrich which dries more easily.

I have some duck (frozen).  Anyone know about eating duck raw or dried?

I don't use spices.  It's delicious as is...
