It is an ancient secret, but I have gained permission from the elders to tell
you how I dry the meats...

Seriously, at first I was sun-drying, but I don't know, I got domesticated...

I started to wonder about bacteria, etc...

I use a Parallax dehydrator I ordered over the net for ~$100 and dehydrate
around 95.

That's it.  I keep 'em in until they're nice and dry, then store in plastic
bags.  The're usually gone within a day, the liver lasts longer as I don't
like to eat a lot of that at once, more randomly...

I can't say that I can yet differentiate the differences except for water
desires after the dried meat.  I like the small size of the dried meat
compared to the large size for fresh meat.  Less in my stomach?  I don't know
what it is, could be 'nuts', I haven't worked it out...
