Hi Ellie,
I was wondering what you meant by "aging" the Artic Char
Do you mean "kirt" style-drying it out with a fan?
Or in the fridge?
You also mentioned in a previous post that "talk therapy" doesn't work-
you seemed lukewarm about the 12-step stuff.  What, in your opinion, is
optimal?
