It's a term from instinctive nutrition. The taste of wild foods that are eaten
raw, without mixing, without dressings, etc... becomes unpleasant once the body
becomes overloaded. The "taste change" thus prevents us from overeating.
But denatured foods, such as cooked foods, or too selected fruits, have a weak
or even a nonexistent stop, i.e. there isn't any marked taste change.
