below is the recipe for a dish that is very popular at the local raw food
potlucks. It can be used as a stand-alone salad, a vegetable dip, or used as
filling for imitation sushi rolls. (For sushi, wrap in unbaked nori sheets,
for center: use mushrooms/scallions, or avocado, or marinated eggplant, or...).
The dish is quite tasty, and disappears quickly at potlucks. I have tasted
it, but never made it personally; I obtained the recipe and am simply passing
it on, in case others want to try it.

UnTuna: Raw Imitation Tuna Salad

Begin with:

0.5 cup almonds (dry)
0.5 cup sunflower seeds (dry)
0.5 cup sesame seeds (dry)

Soak almonds for 12-48 hrs, rinsing every 12 hours.
Soak the sesame and sunflower seeds for 5-8 hours, drain and rinse.

Once these ingredients are ready, you can make the salad:

2 stalks celery
0.5 cup onion
0.5 bunch parsley
0.25 cup water
2 tsp Braggs
0.25 cup fresh lemon juice
0.5 tsp garlic, powdered
0.5 tsp onion, powdered
0.5 tsp kelp, powdered

Chop celery, fresh onion, parsley, into small pieces.
Blend soaked nuts/seeds with water, lemon juice, Braggs, and powders.
Thoroughly stir nut cream into chopped vegetables.
Shape salad and garnish with parsley or chopped red sweet peppers.

For a taste closer to tuna, add more kelp powder. Can also make this
recipe using walnuts, or other nuts, for a different taste.

Comments:
1) Can certainly sprout the almonds, if you like. Can also peel them: blanch
with hot water from faucet (not boiling water) for a few seconds and peel.
The sesame could be sprouted for a day. The sunflower seeds could also be
sprouted, but that could alter the flavor as it increases the volume of
sunflower in the recipe.
2). I think (not certain) that the dish was made with scallions (green
onions), one of the times I tried it. That is, scallions might be substituted
for mature onions - try and see.
3) The recipe calls for onion powder. Given that it contains fresh onion, I
don't know why it also requires onion powder.
4) Idea: try dulse powder instead of kelp powder. Might let you omit the Braggs?
Just a thought - don't know if that would be an improvement or not.
