I remove them from the pods if they haven't already been removed, then
soak in water overnight, rinse and eat. You can also go to the trouble
of removing the outer husk of each bean after it's been removed from the
pod, and then soak and eat just the kernel. But I think the outer husk
tastes just fine and dandy, so I don't bother with that extra operation.
[Of course, sometimes when you buy them, the outer part of the bean has
already been removed. You can buy them in three ways: (1) in the pod,
(2) out of the pod but with hull attached, or (3) pod and hull removed.]
Or you can cook the inner beans, mash together with cooked eggplant,
lemon juice, oil, and spices and have baba ganoush, but that would be a
different Newslist...
