A problem that I am not sure if I really judged it right:

If I buy a single chemical, let's take the famous Pauling example
L-ascorbicacid, I know from the "L" that it is a certain isomer of this molecule.
Chemistry knows the problem of denaturation already and has developed des-
criptions that deal with the threedimensional structure of molecules.
My dictionary has no entry for the word I was looking for: secondary (?)
structure of molecules, higher order structures.
Anyway, chemistry can describe whith its language what happens if a protein
is denatured.
As far as I have understood it a denatured L-ascorbic acid wouldn't be
L-ascorbic acid anymore. Perhaps it would have changed to D-ascorbic acid,
perhaps it would have been divided into two or more pieces which represent
different molecules.
For my purposes which I will explain in depth in a later contribution it
is important if I can safely take in e.g. pure L-ascorbic acid or if I will
put a denatured or unnatural substance into my body if I do this. For some
rare cases I found out it might be useful to eat such single substances
even if one practises instinctive nutrition the rest of the time as I do.

Scientific wellfounded answers would be appreciated.
