<< I read somewhere that if sunflower seeds are roasted the magnesium value
 goes down a lot, like about 70%.  I lost the article and wonder if it is
 true or not.  Any ideas on that one?

What does heat do to vitamins and minerals ?  According to various experts in
the field of raw and living nutrition - heat destroys enzymes, vitamins, and
minerals, depending on the temperature and duration of exposure.  When food is
cooked, the aroma is the cooking nutrients in the food, including the vitamin
and mineral content. Anything cooked over 5 minutes at over 212 degrees is
reported to lose close to 50% of it's food value.
