This is a nuisance thing about Outlook, it doesn't make this task at all
"intuitive". First you have to add "Outlook address book" to your services.
(Not that the Address Book is the same as the Contact List; another thing I
find slightly irritating.)

Go to Tools/Services/Add... and select "Outlook address book." Click OK,
and OK again, to accept the changes. You will get the message saying "this
won't be added" to your profile until you exit and log off. Go ahead and
close the program, and then reopen it. Now, when you right-click on
Contacts on the Outlook bar, the "show this folder as an email address
book" option under Properties/Outlook address book will be available.
