  I think the problem in this case is that the file contains all of the
binary (or PostScript or whatever) codes that would have been sent to the
printer if you had not selected "print to file".
  I believe the fix is to create a Generic/Text printer, and select that
before printing to file.  The file should then contain a plain "vanilla" copy
of the text.
