: A quick experiment showed that I can put both the name and address in the
: "to" field.

Hugh,

Perhaps you'd like to share your wisdom with us. So how does one put both
items
into the ['To:"] field??

: This doesn't affect the actual e-mail address to which the message is
sent.
: Why would anyone wish to do this?

I can think of a very good reason:
I have four email address with the name Jerry, two for which I have no last
name,
but I recognize the email address. Being able to see both the name and the
email
address will confirm the correct Jerry in the ["To:"] field just before
clicking on send.
I think that's a legitimate reason, and therefore an advantage to seeing
both bits of
info in the ["To:"] field.
