I tried this (changing my default email in OE), but it still didn't stay changed.  What else can I try?

Have you tried changing it in Outlook Express?  It make
"stick" if you open OE and under Tools - Options, click
the button "Make Default" for email toward the bottom of
the screen.  You may have better luck there.
