To begin with, turn off Automatic Updates. To do this, right click My Computer then left click Manage. Left click Services and Applications then left again on Services. Expand the window to make it easier to navigate.
Find Automatic Updates and double click it. Change the setting from Automatic to Disable then click on Stop. Don't be worried if the service doesn't seem to want to stop. Now click Apply then OK or just OK. Now Windows will only update when you go to the update site.
Incidentally, while you're in Services, there's a bunch of other stuff you can safely disable - about 36 to be more accurate.
Go here first: http://www.blackviper.com/WinXP/servicecfg.htm and download XPServices.zip. Print it out then configure your entire Services collection according to your version of XP. I can confirm that the tweaks work.
