  When you "install" most programs, one of the things that the installation 
process does is create a shortcut -- sometimes a folder containing a number 
of shortcuts -- into the "Start Menu" folder.  When you go to "All 
Programs", it's really showing you the contents of that folder.

  You may have additional programs in folders on your hard drive (probably 
within the "Program Files" folder...) that don't, for some reason, have 
shortcuts created.  Sometimes, you can manually create a shortcut and that's 
all that's needed, but some programs also need various registry entries that 
the installation process should also have created....
