It's been possible to run Mac OS on intel hardware for quite a while.
"A "Hackintosh" is a computer that runs Apple's OS X operating system
on non-Apple hardware. This has been possible since Apple's switch
from IBM's PowerPC processors to Intel processors a few years ago"
For Ubuntu, just download the Live CD and boot from it to test your
hardware. Depending on your needs, you may find Linux a viable and
satisfactory replacement for Windows. I have a desktop and a Netbook
that have run several versions with no problems.
