I don't know about ME crashing if there's more than 512Mb RAM - hope an
expert can enlighten us (I stayed with ME a very short time, before moving
back to Windows 98 - ultimately to XP). But on the Flight Simulator
problem, do check available disk space and the size allocated for virtual
memory. If there's insufficient disk space the kind of problem you're
describing may occur as the program - or the OS - tries to write to or read
from the disk and/or a cache.
