  Actually, the clients will scan channels looking for the router/access 
point, and use whatever channel they find it on.  So it only needs to change 
there.

  A few access points can be configured to move to a less-congested channel 
when interference is encountered, but that's mostly on higher-end gear.  
When I surveyed the wireless around my neighborhood, over half of the 
detected networks were duking it out for channel 11, leaving 1 and 6 
relatively free.

  (Because B/G signals spread out over two adgjacent channels on each side, 
using 1/6/11 fully saturates the spectrum.  Using any channels closer 
together than that forces them to reduce power and bandwidth to avoid 
interference.)
