10 and 100 Mbps Ethernet use just 2 pairs (4 wires).

However with the impending finalizaton of a Gigabit Ethernet Standard for
UTP Cat 5 Cabling, it is  using all 4 pairs (8 wires).

This site provides more info on how Gigabit-Ethernet will support
Cat 5 Cable on copper wire.
