The easiest way to do this is to install the new disk as a slave, or
whatever's appropriate. In the past I have used a USB adapter, but anything
that works is OK.
Create the partitions you want. You'll be asked during the restore whether a
given partition is to be primary.
This is much less demanding than it may appear.
