From what I read your diet consists of vegetables and potatoes
with a lot of seeds, some nuts and a few grains and legumes
+ a little dairy.  With your (near) exclusion of animal foods this
makes your diet basically a natual hygiene version (without the fruits)
of a neolithic diet.  There is nothing wrong with this except for the
fact that you are on a paleo food list insisting that you are eating a
paleo diet.

To satisfy your scientific curiosity maybe one day
you will try being an extraordinary omnivore and
try a paleo diet.
