In my opinion, there's nothing particularly wrong with it, as
long as the source of the vinegar is acceptable.  Malt vinegar,
since it's made from grain, would not be acceptable, but cider
vinegar and wine vinegar should be.

As you pointed out, small amounts of vinegar would have been
consumed in the form of overripe berries, fruit, etc.  In fact,
if you've ever eaten wild grapes you have experienced this first
hand.

PS  On the subject of malt, as far as I know maltose is only
present in non-paleo foods: grains and starches.  Is this
correct, or are some of the starches considered paleo?
