For those of us who are not inclined to make pemmican, would
something like hard salami be a reasonable facsimile?  Or kosher
salami?  As far as I know, these types of salami consist mainly
of cooked beef or pork and fat, plus some seasoning.  Hard salami
in particular travels well without refrigeration.  Ray Audette
does not mentional salami but does say that processed meats such
as sausages are acceptable, provided they are not laced with
sugar or grain fillers.
