I think I'll check out Central Market too, we have one that just opened in
Fort Worth.  I've been getting mine at a little health food store (I didn't
find any at Whole Foods), Spectrum which says med/high temp also.  I use it
for frying or sauteing just about anything, veggies, meat, etc.  But I also
use butter and bacon grease - they just make foods taste so much better!!
