Funny, I had just the opposite experience. As soon as I went
paleo, chronic constipation ended. I don't get it much any
more. My diet is mainly fatty meat, eggs, some veggies and a
lot of fruit. I think eating a lot of fat helps. As for
specific foods, apples seem to be the best for me. If I get
trouble, usually after eating some bread (had a pizza last
weekend) I eat an apple at every meal, and that seems to do it.

Some stretching helps a lot. Put your hands over your head
and clasp them, then pull from side to side. Really helps.
Picked that up from a guy who went through a hindu bowel
cleaning treatment in India. Especially, twist your body to
the left while stretching, and even while "sitting".
Straightens out a kink in the large intestine.

Drink a big glass of water as soon as you wake up in the
morning, and another just before your habitual bowel
movement time.

Avoid constipation causing foods, such as bananas, wheat,
cheese, chips and other junk foods (of course none of US eat
any of those!) whatever seems to cause trouble for you.

Probably you are losing too much water if you are just
returning to low carb after eating normal foods. Low carbing
takes water. I don't drink much at meals anymore, it seems
to slow digestion, but I drink a lot between meals. It seems
to help.
