I found this very telling link during my morning surf:

It shows how a huge proportion of the 'edible consumption' production
of oil in the U.S. is soy-- 79%. It's companion to the article at:

...so vis a vis the American diet, what I'm curious about it what all
this soy oil is winding up in?  The one tale I have heard and probably
repeated here before is about peanut butter manufacturers extracting
oil from peanuts to sell separately for more money, and injecting cheap
soy oil into their peanut butter to replace it. Ech.
