Tell her to keep an open mind to red meat as she progresses in the diet.  I
never was a huge fan of steak, but once I got my carb cravings under
control, it seemed like a nice juicy steak had a much bigger appeal.  Does
she like hamburger meat?  I often create my paleo version of Hamburger
Helper by simmering veggies and herbs and sometimes spices with hamburger
meat.  You can have quite a bit of variety by varying the veggies, herbs,
and spices, and she'll get some red meat.  Does she like beef stew?  Another
idea, has she tried grass-fed beef?  Many find the taste of that to be much
more appealing than grain fed.  Plus, it's healthier.

Also, I believe that for many women (and this doesn't apply to everyone)
tend to eat less meat than their male counterparts.  This would make sense
from a paleo perspective since women did the gathering and foraging, so
berries, nuts, and veggies would have been a larger part of the female diet.
She can use eggs, nuts, and meat that she likes for her protein sources.
