Hi JoAnn,

I enjoy this same type recipe quite often, although I prefer Kale to
Collards. Often I do the same thing with free range ground turkey instead of
sausage or bacon. I get this packaged frozen at the HFS, and at $3.55 a
pound, it is the least expensive free range meat of any kind I can find.
Also, I like my greens cooked until just wilted, 5 minutes or less. This way
it is closer to raw, but cooked enough to make it more easily digestible. But
I suppose that is a matter of personal taste.
