When I *had* to eat a minimum quantity of matzah at the Passover
seder, I chose organic spelt matzah over wheat.  Can't say whether or
not it made a difference, but at least I *felt* slightly better about
using it if indeed it might have been easier to digest.  I suffered no
apparent ill effects.
