I agree this does not sound like enough.  You'll kill for something
green by the end of 5 days.  You can take fresh eggs which will keep
fine for several days, and fry them in some of the butter.  (I like the
idea
of carrying butter in a plastic container).  You can get a
hard plastic egg carton for camping in which you could take 6 eggs.
For the first day you can take fresh veggies and fruit.  If you're
carrying
water anyway, you could just as easily carry it inside the apple or
carrot or
even cabbage.

I'd say double up on the nuts too.
At the present ration you would have only 2 oz a day which is small.
If your diet includes tomatoes, you can get dried tomatoes which would
keep, be nice in an omelet, or give you a taste variety.  How about some

oil-packed olives? (the half-dry ones which are light for the food
value).
You'll be the envy of your companions.
