Todd,

If you're seriously considering going the meat-vegetable ketogenic route,
why not simplify matters and just make it an all-meat diet? Totally
eliminating carbs and having only two variables to deal with (protein/fat)
should help you optimize ketosis for your particular situation and perhaps
even facilitate compliance. Though you feel your carbs are already low, I
bet this evaluation could be quite tricky and subject to a number of
variables relating to genetics, activity level, etc. Also, it could take a
while for the diet to have an effect, particularly to take down
cholesterol. I doubt that a few weeks would be a fair test.

Stefansson's example is compelling.
