By far, the best program that I have seen combines the benefits of a low
carb diet
with the goal of weight training is 'Natural Hormone Enhancement' by Rob
Fagin.

Very basically you eat low carb (less than 60g a day) and two evenings a
week you eat
a high carb (no restrictions), low fat, moderate protein meal.  The
advantages of the
'carb up' include providing glycogen stores for high intensity exercise
(some muscle
fiber types that are only recruited for max effort exercise can use only
glucose) and
thyroid hormone T4 values dont drop (as often seen with long term low carb
diets).
The diet plan is NOT strictly paleo, but of course it can be easily modified
to meet
your diet restrictions.

Following this type of diet and engaging in 'hormonally beneficial'
exercise, you can
essentially drop fat and gain muscle at the same time.  i.e. in the same
week.

The book is very well footnoted and contains a lot of recent research.  Even
if you
aren't interested in the diet perse, it is a good read.
