I haven't been following this thread closely so please forgive me if this is
redundant info.

Truffle-infused oils are meant to be used as a *condiment*, not a cooking
oil. They could be added to a salad dressing, for example. In my pre-paleo
days I used to drizzle white truffle oil over porcini risotto. **A little
goes a long way!** Truffles are so expensive because they are difficult to
gather, as they grow completely under the ground. As I understand it, pigs
are used to sniff them out. Sometimes the pigs eat them before they can be
recovered. I don't know if truffles can be cultivated. Truffle oil is an
indulgent, delicious treat that seems perfectly suitable for paleo.
