Here's the discussion I was hoping for.

Lactose intolerance is not nearly the entire story of why we have problems
with milk.  Ideas about the microevolutionary ability or inability of small
segments of the world's population to handle dairy aside, humans are just
not able to properly digest cow's milk at ANY stage of life any more than
we can properly digest cereal grains.
