A crockpot is great.  I made a great 7 bone roast today by putting a 7 
bone roast in crockpot, added a can of stewed tomatoes and added Italian 
seasonings, garlic and onion powder and some cinnamon. Yummy!

Also chicken thighs and drumsticks crockpot well.  Chicken breast, IMHO, 
don't crockpot well - not enough fat, I guess?

This really isn't paleo but it makes a great pork butt roast - put roast 
in crock pot, add a can of coke (coca-cola is best for some reason), add 
a package of onion soup mix and cook all day.  I put the layer of fat on 
the roast on the top with the hope that the fat will cook through the 
meat - not sure if it really does.  This coke and onion soup mix works 
will with other fatty roasts.  I tried it with a lean pork roast and it 
wasn't very good.

You can also do a meatloaf in the crockpot but it must be made from 
fatty meats - ground lean turkey is pretty bad but the cheaper ground 
beef was good.

You can look up crockpot recipes on the Internet for more ideas.  Some 
folk say the newer crockpot cook too high, so be careful with that.

I also freeze all meat left overs, so I always have a quick and easy 
meal for those nights that I can't cook or forgot to take something out 
of freezer.  If you freeze in small amounts it's easy to microwave or 
heat in toaster oven until warm.
