Yeah, and it definitely sounds right to me.  I suppose I'm curious about how the
Inuits fit into this picture.

Since their cholosterol profiles are good (from the accounts I've read) either:

1.  The meat they eat is not high in saturated fats
2.  Their caloric intake is low.

Anyone know which one is the case?
