Is it possible to over dry meat when using a food dehydrator?

no as long the heat doesn't reach higher than body temperature . it makes
the powdering in a blender easier

<When I eat food that contains a lot of tallow or lard I feel faintly
nauseous.>

if you eat your fats in their raw state , you will see that its is not
making you nauseous . because you will not be able to overeat saturated fats
beyond your need for it . you will not be able to salivate enough and it
will become pasty.
IMO cooked saturated fats is hard on the liver .

< Has anyone got comments on the
practice of "corn finishing" beef? I know it's not optimal but how does it
compare to grain fed beef?>

if this finishing is not done at a feeding lot but by a local farmer, you
at least avoid many other harmfull ingredients of their feeds ( antibiotics
etc....) but overwise corn is not food for a cow and will create an
unbalanced ratio of fatty acids . the whole purpose of finishing with grains
or corn is to makes the animal obese so it sell for more .
eating obese animals doesn't appeal to me .
marbled meat that result from feeding unatural foods (for a cow) is a
pathological process non existant in the fattiest of wild animals .
on top of that eating grain finished meats support the monoculture of grains
that deplete fertility of the soil .
No civilisations based on grains survived the depletion and the
desertification of their lands .( from mesopotamia to the anasazis ).The
modern western civilisation will not be an exception but this time will
bring the whole world down with it ( thanks to global economy, the power of
technology, and belligerant attitude of the american empire )
i have been glad to learn that one university of oregon is proposing a
course on the rise and fall of civilisations .
the professor that teach it recognised some patterns leading to the fall of
all the previous civilisations and see them happenning right now in his own
culture .
I see being ethical (toward sustainaibility ) in our food choices as a
determinant factor in deciding our future .

please encourage and require from local small farmers to go grass fed .
