1. The glycemic index is not consistently a predictor of insulin response.
2. In addition, both insulin and glucagon response should be considered when
evaluating the metabolic effects of a particular food.
3. Lastly, few of us eat single foods in isolation.  The glycemic index does
not accurately predict the metabolic effects of combinations of foods.
