I'm not going to get into whether or not bacon is paleo nor do I question the
deplorable conditions of pork production (which I experienced first hand last
June when I visited relatives' farms in Iowa), but for those here who do eat
bacon, I have found a great nitrite free honey cured bacon in both some Whole
Foods and Piazza's stores here in the San Franscisco bay area. It's called
Beelers and is sometimes in the refrigerated section and other times in the
frozen section. It is expensive and it's very meaty. Everyone I've served it
for says it's the best bacon they've ever had. I find it a little sweet but I
like the meaty-ness.
